Ingredients
  1. 8 cups red potatoes
  2. 1/2 cup green bell pepper, finely diced
  3. 1/4 cup red onion, finely diced
  4. ½ cup olives, sliced
  5. 4 scallions, diced
  6. 4 slices bacon, cooked and crumbled
  7. 1 tbsp red wine vinegar
  8. ¼ cup mayonnaise
  9. 1 tbsp dijon or spicy brown mustard, Emeril’s Kicked Up Horseradish Mustard works great too
  10. 2 tsp horseradish
  11. Salt and pepper
Instructions
  1. Boil potatoes in salted water until softened but still firm enough not to get mushy when stirred. Drain and let them cool. Drizzle with red wine vinegar.
  2. While your potatoes are cooking, slice and dice your veggies – red onion, green pepper, and olives.Mix the mayonnaise, mustard, vinegar and horseradish. Add more horseradish and mustard till you get it spicy enough for your taste. I like mine very spicy. Combine with the veggies you just sliced and diced.
  3. When the potatoes are cool, mix into the bowl with your horseradish mix and veggies. Add the bacon. Garnish with scallions and salt and pepper to taste.
Notes
  1. When I first made this, I used jalapeños instead of olives. Then I decided to make it for a potluck and switched the jalapeños with olives. It was amazing! Next time I think I’ll try it with both.
