Ingredients
  1. 1 15.5 oz can black beans
  2. 9 oz frozen corn, thawed
  3. 1 tomato, chopped
  4. 1/4 cup red onion, chopped
  5. 1 scallion, chopped
  6. 1 lime – squeeze the juice out of it or use one of those cute lime shaped bottles
  7. 3 tbsp extra virgin olive oil
  8. 3 tbsp cilantro
  9. 3 tbsp sliced jalapeno
  10. Small can of green chilies
  11. salt and fresh pepper
  12. 4 slices of bacon
  13. 3 tbsp cilantro
Instructions
  1. Combine beans, corn, tomato, onion, scallion, cilantro, jalapeno, green chilies, salt and pepper.
  2. Mix with lime juice and olive oil.
  3. Marinate in the refrigerator 30 minutes.
  4. Add avocado and bacon before serving.
Notes
  1. This is amazing and has become a staple around my house. It’s good by itself or to pep up boring lettuce salad. We like to use a yogurt Parmesan Caesar dressing when it’s added to a salad.
