Loaded Baked Potato Soup. This is an amazing soup, so thick and creamy and very filling.

  1. 1 lbs Bacon
  2. 4 medium – large Potatoes (can substitute with Instant potatoes)
  3. 2 tbsp Butter
  4. 1/2 Onion chopped finely
  5. 1 bunch of Chives or Scallions chopped
  6. 1 can of Campbell’s Cheddar Cheese Soup
  7. 2 cups of Chicken stock
  8. 2 cups of Milk
  9. Parsley
  10. Salt & Pepper
  11. Celery Seed or Celery Salt
  12. Shredded Cheddar
  13. Sour Cream
  1. Poke holes in the potatoes and microwave until really tender – about 15 – 20 minutes. Or you can bake them in the oven at 400 degrees for about an hour or until tender.
  2. Cut up the bacon into about 1 inch pieces and fry until crispy. Remove from pan and place on paper towel lined plate to drain.
  3. Take 2 tbsp of the bacon grease or 2 tbsp butter and heat in the soup pot at medium heat.
  4. Add the chopped onions and saute until tender.
  5. Add the chicken stock, milk and cheddar cheese soup to the pot.
  6. Peel the potatoes and mash them with a potato masher or put in a food processor and add them to the pot.
  7. Add in the parsley, salt, pepper, and celery seasoning to taste.
  8. Add about 3/4 of the bacon bits.
  9. Cook for about 30 minutes on medium heat and stir frequently.
  1. Serve in bowls and garnish with a dollop of sour cream, bacon bits, cheddar cheese, and chives.
