White Chicken Bacon Lasagna
A delicious twist on Lasagna: White Chicken Lasagna with bacon and mushrooms

Ingredients
  1. 9 lasagna noodles
  2. 4 cloves of garlic, minced
  3. Cup of sliced mushrooms
  4. Cup of sliced onions
  5. Cup of cooked, cubed chicken
  6. Stick of butter
  7. Cup of milk
  8. Tbsp flour
  9. Cup of ricotta cheese
  10. Cup of Parmesan cheese
  11. Two cups mozzarella cheese
  12. Two eggs
  13. 15 slices of bacon
Instructions
  1. Cook bacon, make it crispy. When done, place on paper toweled plate to soak grease.
  2. When bacon cools, crumble it.
  3. While bacon cooks, bring large pot of water to boil. Cook pasta according to directions on box for al dente (or slightly tough).
  4. For cream sauce, sauté minced garlic with butter for 5 min on med heat. Add cold milk and immediately add flour. Continuously stir for 10 min. Add chicken, bacon, mushrooms, and onions. Stir and take off heat.
  5. The pasta should be done around this time. Place pasta on aluminum foil sprayed with non-stick spray.
  6. For cheese sauce, combine ricotta, parmesan, and eggs in bowl.
  7. Start layering lasagna! Begin with the meat mixture. Add three strips of pasta. Cheese sauce and mozzarella. Three strips of pasta. Cream sauce, dollops of the last of the cheese sauce. Three strips of pasta. Last of cream sauce and the last of mozzarella on top. I added a bit of cheddar for color and flavor diversity.
  8. Bake on 350 for 40 min covered.
  9. Bake an addition ten min uncovered.
  10. Let it cool a bit then cut into portions.
Notes
  1. I could not find ricotta at the store I went to and didn't want to go anywhere else. I used two cups of parmesan, two eggs, and 3 tbsp of plain greek yogurt that I had on hand and it worked deliciously*

  1. Don't let mixture sit too long!
